Jaime Pérez, a protégé of the often acclaimed "most
influential chef in the world", Ferrán Adrià, Pérez became
a leading chef in Adrià´s renowned 3-Michelin star "El Bulli"
restaurant. Also, during his career Jaime has worked in
collaboration with other giants in the business, such as
Carlos Abellan, Sergi Arola, Pedro Subjiana and Oriol
Balaguer, all of whom have influenced his style of cooking
and left their make in different ways. These chefs have
acquired global recognition as ground-breaking pioneers
of the culinary world
Before arriving at Monte Rei, Pérez has been working as an
Executive Head Chef at the one of Spain's most recognized
and luxurious hotels, The Ritz Carlton Arts Hotel in
Barcelona.
There Chef Pérez developed his distinctive brand and introduced
new Mediterranean dishes achieving a successful combination of
Catalonian, Andalusian and Basque cuisine based on fresh
ingredients combined to respect the original flavours, where
spices are used to enhance the taste and not to hide it.
Chef Pérez will manage the overall operation of the restaurants,
including staff and service, year-round. As far as the menu, he
will incorporate elements of Spain's exciting culinary movement;
this cuisine blending innovative techniques with regional products
and history will produce dishes that are as much a work of art as
they are designed to suite the most discerning palettes.
